Before the beginning of my accidental career, I managed and toured with international recording artists for 12 years. For the past 25 years, I’ve eaten my way around the globe, traveling millions of miles in search of culinary adventures and inspiring foods for my three TV series that spanned 12 years, and seven cookbooks. Along the way, I’ve broken eight food-related Guinness World Records, competed in some of the most outrageous food competitions on the planet, cooked alongside countless amazing chefs, and sampled every local street food imaginable at ramshackle carts, and street stalls from Italy to India. The collective experiences from my two careers, combined with the tricks, techniques, and hacks that I’ve learned along the way have formed the backbone of how I achieve results in the food world. In 1999, just after I finished my third cookbook Off the Eaten Path, but well before food trucks, the internet, and the Food Network existed, I raised $250K from sponsors for a harebrained scheme to go off the eaten path to promote my book. Then I bought the shell of an Airstream trailer, tricked out the interior with a $60K stainless steel kitchen, topped it off with two eight-foot-long 3D slices of toast, and dubbed it The Toastermobile. The moment the work was complete, I hired a crew of three like-minded pirates and embarked on a 3-month, rock n' roll style, 30-city, 15,000 mile whistle stop tour around America. That odyssey broke every rule, landed me in People Magazine and on CNN—and established my brand as a catalyst for out-of-the-box culinary solutions.
